With just 5 very common household spices you can make a batch of this easy meal prep blackened chicken seasoning and marinate while you prepare your delicious sides.
Just like all the recipes in this series, this one is also a very easy 3 step process so you can adjust it to your schedule by breaking the steps into different days or times. You can head to the end of this post to watch the video or print the complete recipe. The 3 steps to making this very easy meal prep blackened chicken are:
Step 1: Blackened Chicken Seasoning Mix
1 tbsp Black Pepper
2 tbsp Salt
1 tbsp Garlic Powder
.5 tbsp Onion Powder
.5 tbsp Smoked Paprika
This amount of spices will make about a ¼ cup of blackened chicken seasoning mix so what I do is scale the recipe up so I can store it in a large plastic container. I then grab ¼ cup of it whenever I need to marinate some chicken (will yield about 4 chicken breasts or 6 boneless thighs.)
Like I always say, the best part of making any recipe at home is the way you can always adjust the recipe to your liking. Add some cayenne pepper for some heat!
Step 2: Blackened Chicken Marinade
4 whole chicken breasts, filleted
¼ cup Easy Blackened Chicken Seasoning Mix
¼ cup Olive Oil
¼ cup Water
So it’s time to marinate! Grab all your ingredients and thrown them in a zip lock bag. For best results, marinate your chicken for at least 1 hour, no more than 4 for chicken breasts.
Add ¼ cup of your seasoning mix, ¼ cup olive oil and ¼ cup water. Massage the marinade into the chicken well and marinate in the fridge.
Step 3: Cook the Meal Prep Blackened Chicken
Chicken fillets can dry out so fast, so just cook it for 3 minutes on each side on medium-high heat. Make sure you let it rest for more than 5 minutes after it’s cooked so it could reabsorb all its juices.
I love serving this on top of a salad full of fresh greens and bright colored veggies (we have meal prep veggie recipes too!). It’s very versatile so you are limited to your imagination.

Easy Meal Prep Blackened Chicken
Throw this marinade together with 5 very common spices you may already have in your cupboard. Try this meal prep blackened chicken recipe with stir fried potatoes and veggies as sides to complete a well balanced meal.
Blackened Chicken Seasoning
- 1 tbsp Coarse Black Pepper
- 2 tbsp Salt
- 1 tbsp Garlic Powder
- .5 tbsp Onion Powder
- .5 tbsp Smoked Paprika
Blackened Chicken Marinade
- 1/4 cup Blackened Chicken Seasoning
- 1/4 cup Olive Oil
- 1/4 cup Water
Meal Prep Blackened Chicken Recipe
- 4 whole Chicken Breasts Butterflied
- 2 cups Steamed Veggies
- 1 cup Stir Fried Potatoes
Mix all the ingredients for the seasoning. This portion will yield 1 marinade session. (about 4 chicken breasts or 6 boneless thighs)
Place marinade ingredients in a zip lock back. Massage well, then marinate for at least 1 hour, no more than 4.
Cook in a hot pan on medium-high heat for about 10 minutes stirring often.
Serve with veggies and stir fried potatoes. Enjoy!
