Teriyaki chicken is such a popular dish with so many variations of recipes with so many complicated ingredients and instructions that can often times overwhelm you so you just pan fry chicken breast fillets with salt and pepper – again! My recipe is so easy to make and delicious that I promise you’ll put it in your top 10 chicken recipe rotation as I did. Well, to be honest, it’s in my top 5.
This recipe is a very easy 3 step process that you can totally break into different times or days so you can always adjust it to your busy schedule. You can head to the end of the article for the video and complete printable recipe. The 3 steps to making homemade teriyaki chicken for meal prep are:
Step 1: Homemade Teriyaki Chicken Seasoning Mix
.5 cup Brown Sugar
1 tbsp Salt
1.5 tbsp Black Pepper
1 tbsp Ground Ginger
1.5 tbsp Garlic Powder
1 tbsp Smoked Paprika
So what you do is grab a bowl or if you want to level up to meal prep pro (like me) grab an empty container of some other spice you’ve used (the bottles where Kraft Parmesan Cheese comes in works GREAT!) and you pour all these spices in. Shake it up really well before each use. This amount will yield about ¼ cup (for one batch which will marinate about 4 chicken breasts or 6 boneless thighs.)
The best part about making your own seasoning blends at home is that you can experiment based on your likes and dislikes. Add some crushed red peppers for some heat!
Step 2: Marinate the Homemade Teriyaki Chicken
4 whole chicken breasts, cubed
¼ cup Homemade Teriyaki Chicken Seasoning Mix
¼ cup Olive Oil
¼ cup Water or Pineapple Juice
So after you’ve made a huge batch of this awesome teriyaki chicken seasoning mix, it’s time to marinate. Keep in mind that you only need about an hour of marinating time for chicken breasts and I wouldn’t marinate anything past 8 hours (or overnight). An hour to 4 hours is the sweet spot for chicken.
In a zip lock bag add your chicken, ¼ cup of seasoning, ¼ cup of olive oil, and ¼ cup of pineapple juice. Massage the marinade into the chicken well and marinate in the fridge.
Step 3: Cook the Homemade Teriyaki Chicken
In a hot pan or skillet on medium-high heat, cook the chicken for about 10 minutes with a little olive or peanut oil stirring often.
That’s it! It’s that easy to make delicious, healthy teriyaki chicken. I personally enjoy serving it with a side of steamed veggies and white rice. Sprinkle some sesame seeds and chopped green onions for garnish.
Pro Tip: To avoid drying out chicken when reheating, set chicken aside and only microwave the white rice and veggies adding a couple spoonfuls of water. When the rice is really hot, add chicken and mix it really well and let the vapor of the hot rice slowly warm up the chicken.

Teriyaki Chicken Recipe
- 4 whole Chicken Breasts cubed
- 1 cup White Steamed Rice
- 1 cup Favorite Veggies
- 1 tbsp Sesame Seeds for garnish
- 2 tbsp Chopped Green Onions for garnish
Mix all the ingredients for the seasoning. This portion will yield 1 marinade session. (about 4 chicken breasts or 6 boneless thighs)
Place marinade ingredients in a zip lock back. Massage well, then marinate for at least 1 hour, no more than 4.
Cook in a hot pan on medium-high heat for about 10 minutes stirring often.
Serve on a bed of rice with veggies on the side. Sprinkle garnishes, enjoy!
