This Italian herbs meal prep chicken recipe is one I keep in constant rotation because of how easily and quickly I could get it prepped. The chicken is so moist, tender and full of flavor! I recommend using Italian dressing or your favorite vinaigrette to create additional flavor combinations.
Like my other recipes in this 9 part recipe series, Italian herbs meal prep chicken recipe is a very easy 3 step process that you can spread out to fit your schedule. You can create a big batch of the seasoning as it stores very well in air tight containers, marinate your chicken at a later time and cook at another. The entire process takes about 15 minutes so there really is no excuse to meal prep delicious and healthy Italian herbs meal prep chicken.
Step 1: Italian Herbs Meal Prep Chicken Seasoning Mix
2 tbsp salt
2 tbsp pepper
1 tbsp oregano
1 tbsp dried dill
1 tbsp dried basil
1 tbsp dried thyme
1 tbsp garlic powder
1 tbsp onion powder
.5 tbsp crushed red peppers
The first step is to grab all of your spices and throw them all in a big bowl and mix well. You can also grab a large spice shaker and mix well by shaking all the ingredients together. You can take things a step further and create a big batch of Italian herbs meal prep chicken seasoning and keep it in your cupboard for marinating on the fly! You only need about a quarter cup to marinate 4 large chicken breasts or 6 drums and thighs.
The best part about creating your own spice mixes is that you can mix, match and substitute spices depending on your likes and dislikes. Substitute some of the dried spices for fresh like basil to give your marinade an additional boost! I love spicy food so I always kick the heat up a notch by adding more crushed red peppers.
Step 2: Italian Herbs Marinade
4 pcs Chicken breasts, filleted
¼ cup Italian Herbs seasoning
¼ cup Olive oil
¼ cup Italian Dressing
This is where the fun begins! Get creative with your marinades, it’s what really helps enhance and boost flavors. I prefer to use Italian dressing as a liquid but I’ve also used vinaigrette, balsamic vinegar and different flavored olive oil. You only want to marinate chicken breasts for no more than 4 hours. Drums and thighs can do a lot better overnight in the fridge.
Step 3: Cooking
With a little bit of olive oil, heat your pan on medium-high heat. Cook for 5 minutes on each side and make sure you let your chicken rest for at least 10 minutes before cutting into it. For sides, try salads, noodles or Alfredo!

- 4 pcs Chicken Breasts Filleted
- 1 cup Fresh Noodle Salad For sides
Mix all dry spices well in a bowl.
Throw chicken, Italian Herb seasoning, olive oil, Italian dressing into a zip lock bag. Massage well. Marinate for at least 1 hour.
Cook each side for 5 minutes on medium-high heat in an oiled pan.
Serve with your favorite sides. Enjoy!
