Who doesn’t like chicken fajitas? You can meal prep them? Taco Tuesday on Thursday? Get your adult on and do whatever you want like a boss and meal prep chicken fajitas! This recipe is seriously so easy to make and delicious all you need is ten minutes of prep time.
Just like my other 9 Best Meal Prep Chicken Seasoning Mixes recipes, this also can be broken down into a 3 step process that you can separate according to your schedule. Prep the seasoning mix on Sunday, marinate on Wednesday and cook on Thursday. Or do it however you want, you’re the boss! Step 1: Chicken Fajitas Seasoning Mix
2 tbsp Salt
2 tbsp Pepper
1 tbsp Sugar
1 tbsp Cumin
2 tbsp Garlic Powder
1 tbsp Paprika
1 tbsp Cayenne
This mix will yield enough seasoning mix for 1 marinating session which will yield about 4 whole chicken breasts or 6 boneless thighs. I suggest you do what the pros (like me) do and make a big batch and keep it in a plastic container for quick marinating on the fly. All you need is about ¼ cup of the mix for each marinade.
The best part about making your own homemade seasoning mixes at home is that you can add or remove stuff you don’t like! Add some extra cayenne for that extra heat!
Step 2: Chicken Fajitas Marinade
4 whole chicken breasts cut in strips
¼ cup Chicken Fajitas Seasoning Mix
2 whole Bell Peppers, sliced
1 whole Medium Onion, sliced
¼ cup Olive Oil
¼ cup Water or beer
Okay, so now you have your fajitas seasoning mix all ready to go into a bag with ¼ cup olive oil, ¼ cup beer and the chicken. Mix well, massage the marinade into the chicken and marinate in the fridge for at least 1 hour, no more than 4 if you’re using chicken breasts.
Step 3: Cook the Meal Prep Chicken Fajitas Recipe
20 minutes before you’re going to cook, slice up some bell peppers and 1 onion and add it to the chicken fajitas marinade.
For best results use a cast iron skillet on medium-high heat. Add some olive oil and cook stirring often for about 10 minutes.
You can serve with tortillas, refried black beans, Mexican rice, lentil soup, and guacamole or pretty much anything you want. I personally enjoy making tacos with fresh cilantro and lime with a nice bowl of lentil soup on the side.

Chicken Fajitas Seasoning
- 2 tbsp Salt
- 2 tbsp Pepper
- 1 tbsp Sugar
- 1 tbsp Cumin
- 2 tbsp Garlic Powder
- 2 tbsp Onion Powder
- 1 tbsp Paprika
- 1 tbsp Cayanne
Chicken Fajitas Marinade
- 1/4 cup Chicken Fajitas Seasoning
- 1/4 cup Olive Oil
- 1/4 cup Water or Beer
Meal Prep Chicken Fajitas Recipe
- 4 pieces Chicken Breasts in strips
- 2 pieces Bell Peppers in strips
- 1 pieces Small Onion in strips
Mix all the ingredients for the seasoning. This portion will yield 1 marinade session. (about 4 chicken breasts or 6 boneless thighs)
Place marinade ingredients in a zip lock back. Massage well, then marinate for at least 1 hour, no more than 4. Place veggies just 20 minutes before cooking.
Cook in a hot pan (skillet works best!) on medium-high heat for about 10 minutes stirring often.
Serve with black beans, Mexican style rice, lentil soup and many more options!
