The best part about this recipe isn’t the fact that it only has a handful of ingredients. The best part about it is the fact you can create this recipe in 3 separate steps so you can plan your cooking according to your busy schedule.
By far one of the easiest in my mini series of 9 Best Ways to Meal Prep Chicken Seasoning, it only has 4 spices to mix and can be whipped up in no time. Here’s the quick and easy meal prep lemon pepper chicken recipe.
Step 1: Meal Prep Lemon Pepper Chicken Seasoning Mix
2 tbsp lemon pepper
1 tbsp oregano
1 tbsp basil
1 tbsp smoked paprika
That’s it. Just 4 ingredients. Throw them all in a bowl, mix well and you only need 1/4 cup every time you want to marinate about 4 large chicken breasts or 6 pieces of drums and thighs. I like to make a big batch of it, put a label on it and keep it handy to throw a quick marinade together. I’ve also tried this on pork and have also thrown it on baked chicken wings. Delicious! Don’t be afraid to experiment with different flavors either. Try throwing some cayenne pepper in there for some extra heat!
Step 2: Lemon Pepper Chicken Marinade
6 pieces drums & thighs or 4 large chicken breasts
1/4 cup lemon pepper chicken seasoning
1/4 cup olive oil
1/4 cup water
After you’ve made your huge batch of meal prep lemon pepper chicken marinade, it’s time to marinate! Grab a big zip lock bag and throw in your chicken, seasoning, olive oil and water. Try experimenting with different flavors like freshly squeezed lemon, beer, Worcestershire sauce or other aromatic ingredients. Marinate for at least 1 hour or overnight.
Step 3: Cook your Meal Prep Lemon Pepper Chicken
After you’ve marinated your chicken in that delicious marinade, it’s time to cook! You can either bake your chicken at 350° F for about 35-45 minutes or cook in a pan on low-medium heat for 10 minutes on each side. Make sure you constantly flip and rotate your chicken to avoid burning.
Serve your delicious and juicy meal prep lemon pepper chicken with a small baked potato with chives or a healthy noodle salad. Quick and Easy Meal Prep Lemon Pepper Chicken Recipe
Have a hankering for lemon pepper chicken? Try this super quick and easy meal prep recipe. All you need is just a handful of ingredients to create it and once you've tried it, I'm sure you'll keep it in your recipe rotation.
- 2 tbsp Lemon Pepper
- 1 tbsp Oregano dried
- 1 tbsp Basil dried
- 1 tbsp Smoked Paprika
- 6 pcs Drums & Thighs
- 1/4 cup Lemon Pepper Seasoning
- 1/4 cup Olive Oil
- 1/4 cup Water
Meal Prep Lemon Pepper Chicken
- 1 cup Noodle Salad
- 1 pcs Baked Potato
Add all spices in bowl and mix well. Store any excess in dry sealable container
Add chicken, seasoning mix, olive oil and water in a large zip lock bag and massage well. Marinate for at least 1 hour.
Cook in a pan with light olive oil over low-medium heat for at least 20 minutes stirring often. Or you can bake at 350° for 35-45 minutes.
