Spice up your meal prep routine this week with these delicious and healthy spicy Cajun chicken skewers. Meal prep doesn’t have to be bland or boring, which is a common misconception that stops beginners from getting started – this recipe is proof!
You only need about 5 minutes of prep time, 1 hour of marinating and 20 minutes of cook time. If you need to, you can complete these three steps into different days of your week to fit them into your busy schedule. For example, you can make the seasoning one night, then cut the chicken and marinade it the next day, and finally cook it the day after that.
Step 1: Spicy Cajun Seasoning Mix
2 tbsp Salt
1 tbsp Coarse Black Pepper
1 tbsp Sugar
2 tbsp Paprika
2 tbsp Cayenne Pepper
2 tbsp Garlic Powder
1 tbsp Onion Powder
1 tbsp Dried Oregano
1 tbsp Dried Basil
1 tbsp Dried Thyme
1 tbsp Crushed Red Peppers
1 tbsp Chili Powder
The first thing you want to do is grab all your dry spices and mix them well in a bowl. The amount specified above will yield about a ¼ cup of spicy Cajun seasoning mix which should be good enough for 4 chicken breasts or 6 drums and thighs. Make a huge batch to always have it handy for quickly marinating chicken or fish.
What I love about making my own spice mixes is I’m not always stuck with the same flavors if I were to buy my own flavor packets. You can get creative by adding, removing and mixing other elements such as sauces and other spices. Get creative!
Step 2: Spicy Cajun Chicken Marinade
4 pcs Chicken breasts, cubed
¼ cup Spicy Cajun seasoning
¼ cup Olive oil
¼ cup water
Okay, so now we’re on to step 2. Grab a big zip lock bag or bowl and add all of the ingredients. Massage the marinade well into the chicken meat and let sit in the refrigerator for at least 1 hour. Get creative with sauces and liquids to boost flavor! If you’re looking for an extra kick, add some hot sauce like Tapatio or Frank’s hot sauce.
Step 3: Cooking your Spicy Cajun Chicken Skewers
2 pcs Bell peppers, in squares
½ pcs Onion, in squares
12 pcs Wooden skewers
“Pro Tip: soak your wooden skewers in water for 30 minutes to avoid burning and to improve moisture retention in the chicken.”
Okay, before we cook our delicious skewers, we need to prepare them! So grab a skewer and go nuts! There’s no right or wrong way to making them. If you prefer a higher veggie to chicken ratio, go for it. It’s all up to you! The 4 chicken breasts should yield around 12 skewers.
Cook in a lightly oiled skillet on medium heat to avoid burning or charring. You’ll want to cook them for about 20 minutes turning often to cook them evenly.
Don’t forget the sides! This goes well with a fresh garden salad, brown rice with veggies, my healthy version of Mexican Rice (sopa de arroz), baked beans and many more options.

Spicy Cajun Seasoning Mix
- 2 tbsp Salt
- 1 tbsp Coarse Black Pepper

- 12 pcs Wooden skewers
- 4 pcs Chicken breasts cubed
- 1 cup Steamed white rice as side
Add all spices in a small bowl and mix well.
For the marinade, add all ingredients into a plastic resealable bag, massage well and marinate for at least 1 hour.
Build the skewers by adding chicken and veggies on the wooden skewers. Cook on a hot skillet for about 20 minutes turning often to avoid charring and burning.
Serve with your favorite sides. In this example, I used steamed rice and veggies.
