I love it when my meal prep life style and Mexican roots fuse together! This is a stripped down version of my very own mother’s recipe for Mexican style barbacoa chicken. It’s only been stripped down to make sure it follows along the same line of all the other recipes I post on my blog which are simple, easy to make and fast to prepare. You still get the authentic taste and tender, moist delicious barbacoa chicken from the original.
There are 3 major steps involved in this recipe which are prepare the seasoning, make the marinade, and getting down to the cooking. Just like the rest of the 9 Best Meal Prep Chicken Seasoning Mixes recipes, these can all be broken apart to different times and days so that you can fit the recipe into your week however you wish. The three steps to the recipe are:
Step 1: Mexican Style Barbacoa Chicken Seasoning Mix
2 tbsp Salt
2 tbsp Black Pepper
.5 tbsp Ground Cloves
2 tbsp Paprika
1 tbsp Cinnamon
1 tbsp Cumin
1 tbsp Coriander (dried or ground)
1 tbsp Ground Ginger
Mix all of these ingredients into a bowl, mix well and you can store in an empty salt shaker or container. I like to scale this recipe up and store it for quick marinating in the future. This amount will give you approximately ¼ cup of seasoning which is good for 4 large chicken breasts or 6 chicken thighs.
One of my favorite things about creating my own Mexican style barbacoa chicken seasoning mix is that I could try different variations of it until I find that perfect mix. Don’t forget to keep track of your changes!
Step 2: Marinate the Mexican Style Barbacoa
6 pcs Drums & thighs
¼ cup Barbacoa Seasoning Mix
¼ cup Olive Oil
¼ cup Water or beer
Once you’re ready to marinate, put your chicken inside a resealable zip lock bag and pour in your ingredients. Massage the marinade into the chicken well and place in your refrigerator so the chicken can marinate for at least 1 hour. If you decided to use drumsticks and thighs, you can marinate overnight since this meat is a little tougher for the marinade to penetrate. I wouldn’t go over 8 hours.
Step 3: Cook the Mexican Style Barbacoa Chicken
Place aluminum foil on a baking sheet or dish so that clean up can be a breeze and will make cooking more enjoyable. Evenly distribute the chicken on the baking sheet to allow air flow between every piece of chicken and place in an oven for 40 minutes on 375 Fahrenheit.
Pro Tip: If your oven has a broiler setting, broil the chicken covered for about 25 minutes then remove top aluminum and broil for about 8 minutes.

- 2 tbsp Black Pepper
- .5 tbsp Ground Cloves
- 2 tbsp Smoked Paprika
- 1 tbsp Cinnamon
- 1 tbsp Cumin
- 1 tbsp Coriander ground or dried
- 1 tbsp Ground Ginger
- 1/4 cup Mexican Style Barbacoa Chicken Seasoning
- 1/4 cup Olive Oil
- 1/4 cup Water or Beer
- 6 Chicken Thighs
- 1 cup Mexican Rice
Mix all spices to create the seasoning.
In a zip lock bag, add chicken, seasoning, olive oil and water. Massage well and marinate for at least 1 hour.
In a baking pan, space out chicken and bake for 40 minutes at 375° F.
Serve with your favorite sides! Enjoy!
