- 4 Medium sized red potatoes
- 2 Tbsp olive oil
- 100% Natural Chicken Curry Paste by the “Kitchens of India” Company
- 1 cup water
Step 1 – Preheat Cooking Pan
Add olive oil to non-stick cooking pan and set to low-medium heat. This will give you about 5 minutes to peel and cut potatoes. Feel free to swap steps 1 and 2 if you fear burning the oil!
Step 2 – Prepare Potatoes
Peal the skin off the potatoes using a potato peeler. Then, cut potatoes into small cubes, about 1/2 inch in size. Add potatoes to the hot oil in cooking pan.
Step 3 – Brown Potatoes
After adding the potatoes to the cooking pan, increase heat to medium-high. Cook potatoes for about 10 minutes or until a brown crust forms on the bottom.
Step 4 – Add Curry
Add curry paste and 1 cup of water to the potatoes, mixing well. Bring mixture to a boil, and then turn heat down to low. Cover potatoes and let it simmer for about 20 minutes.
Step 5 – Enjoy
You’ll start noticing that your kitchen is filled with the exotic flavor of curry! This potato curry can be eaten by itself or as a side dish.

Simple Potato Curry Recipe
- 4 medium red potato without skin
- 2 tbsp olive oil
- 1 package curry paste packet I used "100% Natural Chicken Curry Paste" by Kitchens of India
- 1 cup water
Peel potatoes and pre-heat cooking pan with oil on medium heat.
Chop potatoes into 1/2 inch pieces. Add to cooking pan.
Increase heat to medium-high and continue cooking potatoes until they start turning golden, about 10 minutes.
Mix curry paste and 1 cup of water to the potatoes. Bring mixture to a boil. Set heat to low and cover potatoes. Cook until potatoes are soft, about 20 minutes.
